I'm pretty sure whatever deal they had with Nike back then was for footwear only. The uniforms were manufactured by Knoxville-based Sports Belle for over a decade before the switch to adidas was made in 1997.

Here's a link to a 2004 NY Times story on Sports Belle. It mentions UT dropping them and going with adidas.
